Carrot Cake Overnight Oats

Put together in minutes, leave in the fridge overnight and you’ve a super filling ready made breakfast waiting for you in the morning.

I like to replicate the flavours of my favourite puddings & cakes into a satisfying low syn, nutritious treat. Try lots of variations – fresh or mixed frozen berries work really well, spiced apple & pear, cherry bakewell (with alpro cherry yoghurt & almond essence), spiced pumpkin pie (pureed pumpkin & pumpkin spice blend), rhubarb & custard (made with half oat milk/half alpro custard), blueberry & banana… there’s so much to choose from and so many combinations to try.  Here’s one of my favourites.


Ingredients – Serves 1

40g Oats
125ml Oatly Oat Drink with Vitamins & Calcium (from allowance or see syn values & suggestions below)
1 freshly grated carrot
1 tsp sukrin gold (or granulated sweetener)
1/2 tsp cinnamon
1/2 tsp mixed spice
1/2 tsp ground ginger
Dash of turmeric
Scraping of vanilla seeds from a pod
Pinch of freshly grated nutmeg
1 Box (14g) of Sunmaid Seedless Raisins or sprinkling of mixed seeds (optional, 2 syns)


You can make this 2 ways, depending on texture and how you want it to look.

1. Combine ALL the ingredients in a bowl, mix well, put into a jar or serving glass – chill & cover overnight or;

2. Layer the oats, carrot & raisin mix seperately – Mix the oats with the milk, sweetener and half the spice mix. Leave to soak for about 10 minutes. Mix the carrot with the remaining spices and raisins (if using). Layer the mixture in a jar or glass – chill and cover overnight.

When ready to serve, I like to top it with a little more grated carrot and sprinkling of spice and a few pumpkin & sunflower seeds for decoration – just don’t forget to count syns for any extras!

Synfree (using milk from HEA & omitting raisins)
1.5 syns (synning the milk & omitting raisins)
2 syns (using milk from HEA including raisins)
3.5 syns (synning the milk including raisins)


I personally include the raisins for flavour & they are packed with nutrition, good sugars & fibre.

Top Tip – Overnight oats are also fab with yoghurt which doesn’t use up your HEA allowance and is low in syn. I would recommend Alpro Soya Yoghurt Plain with Oats which is just 2.5 syns for an entire 500g pot! Just replace the milk with quarter of a pot.
