Really fast, tasty meal which can easily be doubled up to serve more people.Β It’s a great dish to use up whatever vegetables you have in, so feel free to substitute.Β A super, healthy way to smash your 5 a day!
Ingredients – Serves 1
1/2 cup of meat free mince
1/2 cup of frozen green beans, cut in half
1/2 red onion, sliced
1 cup of sweetheart cabbage, shredded
2 peppadew chilli peppers, sliced
1/2 cup of fresh kale, chopped
1 puck of frozen spinach
1/2 carrot, peeled & sliced into strips with a julienne peeler
1/4 cup edamame beans
A few stalks of broccoli
1 sachet Weight Watchers Soy, Chilli & Ginger Dressing
1 tbsp soy sauce
Salt & Pepper to taste
Method
1. Prepare all ingredients in advance. Heat a wok, spray with fry light and throw in the onion and cabbage and fry for 2 minutes, add 1/4 cup of cold water
2. Add the meat free mince and remaining vegetables and cook for a further 5 minutes, stirring often.
3. Add the sauce sachet and soy, add a little more water if desired. Stir well to combine and serve.
