Lebanese Mujadara with Roasted Vegetables

Mujaddara is a traditional middle-eastern dish typically of cooked, lentils, rice garnished with crispy onions.

This flavourful *synfree version is inexpensive, quick to prepare and cook and very healthy due to being packed with free & speed foods.

The recipe is from the Slimming World 2017 ‘Free & Easy’ Recipe Book (pg 128).

I swapped the yoghurt from Alpro Go On Soya Yoghurt Plain (negligible syns for amount used) as a dairy-free alternative and added a little rocket for garnish & peppery flavour. It was even more delicious than it looks – I will be making this often!

*Slimming World – Recipe is synfree. If using a dairy-free yoghurt alternative as I did, make sure you double check the syn value. They can vary quite a bit, here’s the current syn values of the Alpro ones (per pot) as a guide:

Alpro Go On Soya Yoghurt Plain (400g pot) – 1.5 syns
Alpro Soya Yoghurt Simply Plain (500g pot) – 7.5 syns
Alpro Soya Yogurt Simply Plain with Coconut (500g pot) – 2 syns
Alpro Soya Yogurt Simply Plain with Almonds (500g pot) – 2 syns
Alpro Soya Yogurt Plain with Oats (500g pot) – 2.5 syns
