This dairy/gluten free, fresh & crunchy dish is the perfect lunchtime pick-me-up! No cooking involved and takes just a few minutes to prepare.
Sumac is a spice commonly used in Middle Eastern Cooking. Made from dried, ground berries it has a lovely burgundy colour with a sour lemony flavour so goes really well with anything you would normally enjoy adding a squeeze of fresh lemon juice to.
Ingredients – Serves 2
Small can of cannellini beans, drained (reserve the liquid!)
2 large fresh tomatoes, coarsely diced
1/2 a small red onion, finely sliced
2 small black olives, sliced
2 tbsp sherry vinegar
1 tbsp lemon juice
1 tsp Sumac Spice
handful of chopped fresh parsley & torn basil leaves
1/2 a cucumber
1 large carrot
1. Mix together the beans, tomatoes, onion & olives.
2. Whisk together the vinegar, lemon juice, sumac and herbs and toss into the bean & tomato mixture
3. Spiralise the cucumber (leave skin on) & carrot and pile onto 2 plates.
4. Spoon over the tomato & beans with a basil leaf on top to serve.
Negligible syns on Slimming World for the olives, if you want to be really good, just count them as 0.5 syn or leave them out for a syn free option.
