I used Cauldron Original Tofu (1/3 of a pack) which I simply crumbled and stir fried with Coconut Fry Light. Sprinkle over a good dash (or 3) of turmeric for it’s amazing inflammatory and other health benefits and to give the dish a lovely golden yellow colour & earthy flavour.
I served this with a mixed bean rataoutille (syn free, leftovers) on a slice of wholemeal toast (from a 400g loaf) to create this quick & easy, high fibre, high protein, low fat, vegan breakfast or late night supper dish!
