I’ve never been one for roast Sunday Lunches …. Time is just too precious to be labouring in the kitchen. This is my alternative – a tasty, crunchy salad packed with fresh salad vegetables that takes just minutes to prepare. Perfect for enjoying ‘alfresco’ style in the garden on a lazy, sunny Sunday afternoon.
Ingredients – Serves 2
2 cups of Red Gem Lettuce
1 apple chopped (I used braeburn)
2 small sticks of celery
2 inch piece of cucumber, sliced & cut into triangles
2 raddishes, sliced
20g of walnuts, roughly chopped
Juice of 1/2 a lemon
50ml of Koko Dairy Free Original Plain Yoghurt
Salt & Pepper to season
Method
1. Roughly chop the red gem lettuce and place in a bowl
2. Add the apple, celery, cucumber, raddish & walnuts and stir to combine
3. Mix the lemon juice & yoghurt, drizzle over the salad and mix well.
4. Pile onto 2 places and season with salt & pepper to taste.
Slimming World – Just 1 syn for the Koko Dairy free yoghurt. Use HEB for the walnuts, otherwise count 4 syns.
